As you will see in other recipes, there are many ways of preparing the mixture for the cheesy chicken patties. But I wanted to make them Keto so I had to stick within the rules and use only approved ingredients.

The first thing to keep in mind is that you need to chop the chicken into very small pieces. Then, add eggs, almond flour, and shredded mozzarella. This will make the mixture hold together nicely.

Next, you need to add the flavorings such as fresh chopped herbs, dried herbs, garlic, chili, salt & pepper, or any other seasonings of your choice.

Mix everything well, then you can either make them right away or refrigerate the mix until you’re ready to cook them. You can even refrigerate the meat mixture overnight, so if you have a special occasion the next day, like a potluck, for instance, you can prepare it the night before and cook the fritters just before guests arrive.

I made these cheesy chicken fritters with mozzarella, but you can replace it with any shredded cheese. It’s worth noting here that the cheese should be a melty one (like cheddar, gouda or provolone) to hold the mixture together.

As for the seasonings in these cheesy chicken patties, the sky is the limit. Actually, it’s your taste buds and the ingredients available but you get the point.

You can use any of your favorites and here are a few good ideas:

  • chili
  • ground cumin

Cheesy Chicken Fritters Recipe

Ingredients

  • 1.5 lb (700g) skinless boneless chicken breast
  • 2 medium eggs
  • 1/3 cup (40g) almond flour
  • 1 cup (110g) shredded mozzarella cheese
  • 2 Tbsp fresh basil - finely chopped
  • 2 Tbsp chives - chopped
  • 2 Tbsp parsley - chopped
  • 1/2 tsp garlic powder
  • a pinch of sea salt and fresh ground black pepper - or to taste
  • 1 Tbsp olive oil - or more to fry

Instructions

  • Place the chicken breast on a chopping board and using a sharp knife, chop it into tiny pieces, then place them in a large mixing bowl. 
  • Into the large bowl, stir in almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix well to combine.
  • Heat oil in a large non-stick pan, over medium-low heat. With an ice cream scoop or a large spoon, scoop into the chicken mixture and transfer it to the pan, then slightly flatten to create a fritter. Don't overcrowd the pan, cook the fritters in batches, about 4 per batch.
  • Fry until golden brown on both sides, about 6-8 minutes. Keep in mind that you need to cook them at medium-low temp, otherwise they will burn on the outside but won't get well cooked on the inside.
  • Serve with your favorite dip

    You say 4 servings but how many in a serving?. Looks like it would make more than 4 fritters. Also us the nutritional values for 1 fritter?

    Recipe says to chop the chicken super small, and also to chop all the fresh herbs. This can be time consuming if you are a busy mom (and my kids LOVE these fritters!). I did it that way the first few times I made these. Then I got smart and started putting literally all the ingredients in the food processor whole and pulsing for just a second of two and it is done.
    Also if you are not concerned with GF or keto, I have subbed the almond flour for regular flour or left it out altogether. They have come out fine both ways.
    Our family loves these with honey mustard or Chick-fil-A sauce, tater tots, and a side salad!

    Chicken fritter recipe is my favorite for its taste and eat of making. However, I use ghee butter here instead of olive oil because ghee flavor is awesome and I trust the high smoke point safety of ghee. Please try the recipe once with ghee. I am sure you will love it.

      The nutritional info is per serving (396kcal/serving).
      One serving has about 3 fritters, depending on their size.

      You could make the meat mixture and keep refrigerated for up to 2 days. Then form the fritters and cook them.
      Alternatively, you can shape them and place on a paper-lined baking sheet leaving some space in between. It’s important to leave that space and not stack them together because the mixture is quite soft and they will blend together.
      But in any case, don’t keep them longer than 2 days.
      You can also freeze them for up to 1 month and thaw them in the fridge whenever needed.

    This recipe is VERY DELICIOUS! Unfortunately the fritters did not stay together. It could’ve been because I didn’t use a non-stick… I used an enameled cast iron. Either way, I’m saving this recipe and making it again! Thank you for sharing!

      Yes, the cast iron could have caused this. Cast iron can be sticky and cause the chicken fritters to break apart when flipping them.

      The cast iron skillet had nothing to do with the fritters falling apart, actually it was the temperature of the skillet. A little hotter heat and a watchful eye would have been perfect.
