Well, it didn’t cross my mind until I saw Jamie Oliver’s Banana Bread Recipe.

I was amazed by the fact that you can use an “expired” ingredient to make such a delicious dessert. I know, it’s not actually expired, but isn’t that what we all think before throwing them away?

And to think that you can actually make bread out of them? Crazy, right?

That’s what I thought first when I found this banana bread recipe.

But you know me, I always like to try new things in the kitchen. So I decided to give Jamie Oliver’s Banana bread recipe a try. Of course, I added chocolate chips as I always bring my own touch to all the recipes I make.

Now, I didn’t expect to get it right the first time. It was totally new for me, but surprisingly I made a moist banana bread quite easily. I mean, not that I want to brag 🙂 but it always feels good when you make a new recipe and get it right on the first try.

But after baking it, I can honestly say that even a kid can make this easy banana bread recipe.
And if you follow my recipe and video, I am sure you too will be amazed by how easy it is to make the perfect snack.

It only took me about 15 minutes to prep this banana bread recipe and then another hour of browsing through my Pinterest, while it was baking in the oven.

Jamie Oliver’s banana bread recipe is really great. And there are lots of other variations of banana bread out there. But today I am going to show you how to make banana bread with chocolate chips (the Blondelish touch). I’m telling you, it’s crazy delish.

I think this is the best snack you could possibly have with your morning or afternoon tea.
Of course, you can also have it for breakfast, in-between meals, and even as a dessert.

There’s one more thing about this banana bread recipe that makes it the best. It doesn’t have any sugar.

No, the chocolate which I used didn’t have any sugar, I checked. But it’s good that you’re paying attention 🙂
It’s dark chocolate with no sugar added, so it’s safe 🙂

I am sure that by now we all know about the effects of sugar on our bodies. And I know it’s hard as heck to cut down on it especially when it comes to desserts like this Chocolate Cake or Apple Tart

But the good news is that you can make this moist banana bread recipe with honey or maple syrup.
And there’s more good news… your kids will love it. So no more hard time getting them to eat healthy snacks.

Remember! You have to use ripe bananas (medium to overripe is ok). It won’t come out well if they are unripe.

I made it with coconut oil, which is a lot healthier than butter and such a great flavor booster. I also used ricotta cheese to make it fluffy and consistent.

Then I added vanilla and to make it addictive I used my “Chemical X” (Chocolate, of course 🙂 )

Best Chocolate Chip Banana Bread Recipe

A delicious banana bread with dark chocolate and no added sugar. Perfect for breakfast, snack or dessert

Ingredients

  • 5 small (or 4 large) overripe bananas - mashed
  • 1/3 cup (80g) ricotta cheese
  • 3 free range eggs
  • 1/4 cup (60ml) coconut oil
  • 1 Tbsp vanilla extract
  • 2 cups (250g) self-raising flour
  • 1 cup (170g) dark chocolate chips
  • Honey and Butter for serving (optional)

Instructions

  • Preheat the oven to 180°C/350°F. 
    Grease a 9x5 inch bread pan with coconut oil.
  • In a medium mixing bowl, stir together the mashed bananas, ricotta, eggs, coconut oil and vanilla.
    Add the flour and whisk until just combined. 
    Fold in the chocolate chips.
  • Pour the batter into the prepared pan. Transfer to the oven and bake for 45-55 minutes or until a knife inserted into the center comes out clean.
    Drizzle with honey if desired or spread butter on the warm slices and serve.
