When we think about a burger we imagine ourselves digging in a huge bun filled with delicious meat and sauce, that afterward will make us regret and say “I shouldn’t have had the huge one.

Now I need to hit the gym EVERY day for a week” (it always happens to me 🙂 ). Well, this one is a bit different. Although it’s massive, it’s pretty light and it will satisfy your craving (never underestimate the power of a burger craving 🙂 ).

This is one of my favorite burgers because it takes about 10 minutes to make it and it’s mouth-watering.

I won’t go into a lot of details but avocado has so many proven benefits. It lowers your cholesterol, it’s loaded with fibers and heart-healthy fatty acids, and it has so many vitamins and minerals.

I eat avocado almost daily because it is incredibly nourishing and it keeps me going through the long and hectic days (Fusilli with cherry tomatoes and spinach is another vegetarian nourishing recipe that you might like).

Veggie Burger Recipe

You can make this veggie burger recipe in just 10 minutes. It's packed with taste and flavor that will make your taste buds scream for more

  • 2 burger buns
  • 2 Large eggs
  • 1 Tbsp olive oil
  • 1 ripe avocado
  • 80 g Mature Blue Stilton cheese or 2 slices
  • 2 tomatoes sliced
  • 1/2 red onion sliced
  • 1/2 tsp chili flakes
  • 1 Tbsp honey
  • 1/2 lime juiced
  • a handful of rocket leaves


  1. Heat a pan over medium high heat. Add in a bit of olive oil, then add the burger buns, cut side down and slightly brown them for about 1 minute.

  2. Meanwhile, in a small bowl, add the onion slices with honey and lime juice. Mix well to combine and set aside.
  3. Remove buns, lower the heat and gently crack the eggs into the pan. (add a bit more oil if necessary) . Season with salt and pepper to your taste, and add a pinch of chili flakes. Cook the eggs to your liking. (I cooked mine until the white is just set, and the yolk is runny, about 3 minutes.)
  4. To assemble the burgers, firstly add rocket leaves to the buns. Then add tomato and avocado slices, blue cheese, eggs and marinated red onion. Finish the burger by adding the other half of the bun on top.
