Burger with avocado and blue cheese

When we think about a burger we imagine ourselves digging in a huge bun filled with delicious meat and sauce, that afterward will make us regret and say “I shouldn’t have had the huge one. Now I need to hit the gym EVERY day for a week” (it always happens to me πŸ™‚ ). Well, this one is a bit different. Although it’s massive, it’s pretty light and it will satisfy your craving (never underestimate the power of a burger craving πŸ™‚ ).

This is one of my favorite burgers because it takes about 10 minutes to make it and it’s mouth-watering.
I won’t go into a lot of details but avocado has so many proven benefits. It lowers your cholesterol, it’s loaded with fibers and heart-healthy fatty acids, and it has so many vitamins and minerals.

I eat avocado almost daily because it is incredibly nourishing and it keeps me going through the long and hectic days (Fusilli with cherry tomatoes and spinach is another vegetarian nourishing recipe that you might like).
This is one of the best mixes you can do:
Avocado + eggs + tomatoes + blue cheese = Deliciousness overloaded
Everything packed into an olive ciabatta bun.

Ingredients

  • 2 burger buns
  • 2 Large eggs
  • 1 tbs oil
  • 1 big avocado
  • 100 g Mature Blue Stilton cheese
  • 2 tomatoes
  • Few slices of leek
  • 1 tbs chili flakes

Instructions

  1. You need to cut the avocado in two, take the stone out and then slice one half into a bun and the rest into the other bun.
  2. Also slice leek and tomatoes and spread them between the two buns.
  3. Throw two eggs in a pan and fry them with a tbs of oil, on medium heat.
  4. Put them into the buns and add 50g of blue cheese on each.
  5. The next step is to leave the burger under your oven grill for 3min. The cheese will melt and the flavours will blend into the perfect Avocado and blue cheese Burger.
  6. It's up to you to decide which order the ingredients are placed as it won't have any effect on the taste.
