A delish Roast chicken recipe, with veggies and spices

Having friends and family over for the weekend? Don’t know what to cook for them? Then just take a peek at this whole chicken recipe, try it and I am sure they will all love you for it 🙂
This recipe is versatile, meaning that you can change a lot of ingredients (to your own taste) and get an amazing dish for at least 4 people. I chose to make it with veggies like potatoes, carrots, Brussels sprout and red onion. But you can go with your favourite veggies, like broccoli or butternut squash. You can also change the spices and heck, if you don’t like the chicken just go wild with turkey or duck 🙂 (like I did with this roasted Duck and sweet potato purée and garlic peas).
You can make this roast chicken recipe even if you are clueless about cooking and have never been in a kitchen before (please don’t prove me wrong 🙂 ). And this way it will come out tender on the inside, crispy skin outside and deliciously flavoured.
So why bother buying the old and dull baked chicken from the grocery store (that gets cold before you get home 🙂 ), when you can make the best roast chicken yourselves.

How to make a delicious Roast Chicken
Roast chicken with veggies and spices
- 1 medium free range chicken
- 200 g baby potatoes cut into halves
- 200 g baby carrots cut into halves
- 100 g Brussels sprouts trimmed
- 1 red onion chopped into big chunks
- 5 garlic cloves crushed
- 2 Tbs extra virgin olive oil plus extra to rub the chicken
- 1 ½ Tbs Chinese 5 spices or any other spices mix you like
- salt and pepper to taste
Preheat the oven to 200C / 350F.
Place the veggies in a large skillet or oven-proof dish. Drizzle olive oil, and season with salt and pepper to taste. Mix them with your hands to get them all coated.
Place the chicken in the skillet on top of the veggies. Add a bit of olive oil, salt and spices. Rub the chicken well to get it all coated in the spices mix.
Roast it in the preheated oven for about 1h and 20min, or until the chicken is cooked through and the skin is crispy (roasting time depends of the size of the chicken).
