Vegan Quinoa Chopped Salad Recipe
This vegan chopped salad with quinoa is super healthy and you can make it in just 25 minutes. Moreover, it's topped with a tasty, vegan and gluten-free dressing and it is perfect for meal-planning.

quinoa

grape or cherry tomatoes
cut into quarters

diced cucumber

large yellow bell pepper

red cabbage
chopped

celery stalks
chopped

MAPLE SYRUP DRESSING:

apple cider vinegar

olive oil

Instructions
Place all dressing ingredients in a jar. Shake until well combined. Refrigerate until ready to use.
Rinse the quinoa under cool, running water, then drain. Place it in a pot, add water, sea salt and bring to a boil.
Lower the heat and simmer, covered, for 15 minutes. Then take it off of the heat and let it chill for 5 minutes (still covered).
Once the quinoa is cooked, fluff it gently with a fork and let it chill until you chop all the veggies.
To assemble the salad, add all the ingredients to a large bowl. Pour the dressing over and toss to combine.
