Heat a pan over medium-high heat. Add a bit of olive oil, then add the burger buns, cut side down and slightly brown them for about 1 minute.
Meanwhile, in a small bowl, add the onion slices with honey and lime juice. Mix well to combine and set aside.
Remove buns, lower the heat and gently crack the eggs into the pan. (add a bit more oil if necessary) . Season with salt and pepper to your taste, and add a pinch of chili flakes. Cook the eggs to your liking. (I cooked mine until the egg white was set and the yolk runny, about 3 minutes.)
To assemble the burgers, first, add rocket leaves to the buns. Then add tomato and avocado slices, blue cheese, eggs and marinated red onion. Finish the burger by adding the other half of the bun on top.
