Cowboy Caviar With Italian Dressing (Vegan Recipe)
This easy texas caviar recipe takes just 15 minutes to make so it's super quick and easy. It's great as an appetizer, snack or a side dish, and if you're not too hungry, you can also serve it as a main.

1can (15 oz/425g)black beanswell rinsed and drained
1/2bunch of cilantrochopped
Optional:
corn tortilla chipsto serve
Instructions
For the Italian Dressing:
In a clean jar, add all dressing ingredients, put the lid on, and shake well to combine. Set aside.
For the Cowboy Caviar:
Chop all veggies in small pieces.
In a large bowl*, combine the diced pepper, onions, and jalapeños. Give it a good swift stir. Add the cherry tomato halves, avocado, corn, and black beans.
To Assemble
Drizzle the Italian dressing over the texas caviar salad. Refrigerate it for up to an hour to marinade and allow the flavors to meld together.
