To cook the bacon, preheat your oven to 350F/180C and line a baking sheet with parchment paper. Arrange the bacon strips on a single layer onto your prepared baking sheet, making sure they don't overlap. Bake in the preheated oven for about 10 minutes to 15 minutes, or until crispy. Remove from the oven and transfer to a paper towel to drain the excess fat.
While the bacon is cooking in the oven, start preparing all veggies and place them into a large salad bowl.
Add crumbled bacon, Kalamata olives and feta cheese.
Add all dressing ingredients to a mason jar and shake to combine.
Just before serving, drizzle the dressing over the salad and gently toss to combine. Enjoy!
