I decided that in the coming period I will put more emphasis on healthy dishes so I made this delicious salad that has a special place in my heart and diet. The tasty and nutritious cauliflower has multiple health benefits and because it’s rich in fibres, it protects our digestive system.
I believe the cauliflower is a bit underrated for no good reason. Maybe it’s unbelievable that we can find taste and health in such a simple dish as a cauliflower & quinoa salad. Or maybe people think that veggie dishes are usually dull and tasteless but be ready, as I am going to prove you wrong.
You can adjust this Roasted turmeric cauliflower & quinoa salad recipe by using the cheese you like most (like parmesan, feta or even blue cheese), or by using other nuts and seeds than the ones I used. You can even change parsley for coriander or why not use both of them. Make sure you add a reasonable quantity of them because they bring a fresh, special taste to the salad.

Roasted turmeric cauliflower & quinoa salad
- 1 tbs turmeric
- one big cauliflower broken into florets
- 4 tbs olive oil
- 100 g grapes
- chopped parsley
- 60 g greek cheese
- 100 g quinoa
- 30 g roasted sunflower seeds or any other nuts you prefer
- 4 tbs sherry vinegar
- Maldon salt flakes
Heat the oven to 180C (fan/ gas 6).
Mix the cauliflower with salt, pepper, turmeric, olive oil and toss them in a roasting tin. Roast them for 30 min, until they get a nice golden colour here and there.
Rinse the quinoa under cold water, then tip into a pan covered with water(2 parts water for 1 part quinoa) and simmer for 10 min until the grains have swollen. Drain and rinse with cold water to cool down.
Chop fresh parsley and cut the grapes into halves, if they are too big.
When the cauliflower is chilled, toss it in a big bowl, and mix it with the quinoa and the rest of the ingredients.
Garnish the salad with crumbled cheese.
