Lately I couldn’t stop thinking about making a dessert. It’s been a while since my last one and I was practically craving for something sweet. I wanted something simple (less than an hour to make it of course). I love making desserts with short prepping times.
As for the baking time, I don’t stress about it much because the waiting and the scent coming from the oven will make me crave even more (and I kinda love that).
I started browsing through all sorts of articles, recipe books and blogs to see what I could make and then it hit me. Blondies of course. Some creamy, a bit sour, fruity and sweet blondies. So I began prepping them and in about 15 minutes my blondies were in the oven. Once they were golden and ready, the idea for the plating just came to me. It’s pretty easy and you can make it for the special occasions.
You can have it as it comes out from the oven, warm and creamy, and you can try to forget half of it for the next day. You’ll be surprised of its new texture which will be quite different because the chocolate chips will get firmer and the blondies will become stiffer. It will seem as if it is a totally different blondie. If you manage to keep half of it for the next day, I suggest you cut it in pieces and enjoy it with a hot dark coffee or a cup of Earl Grey.
The whole prepping and baking takes about 45-50 minutes.
I had it right after a delicious Duck with sweet potato purée and it was one of my best dinners in a while.
How to make Blondies with dried cherries and white chocolate
Blondies with dried cherries and white chocolate
- 1/2 cup unsalted butter melted
- 1 cup light brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt optional
- 3/4 white chocolate chips
- 1 cup dried cherries or any other combination you like
Preheat the oven to 180C. Line a small pan with baking sheet, spray with cooking spray; set aside.
Melt the butter in the microwave or in a pan, stirring and keeping it at low heat.
Add brown sugar to the melted butter and stir to mix them.
Add the egg, vanilla, and stir. Add flour, salt, and stir a bit more until everything is mixed together, taking care not to over mix or the blondies will come out crusty.
Fold in chocolate chips, fruit, and pour the batter into prepped pan.
Bake for 30 minutes, or until the edges begin to slightly pull away from the sides of the pan.
You could make the toothpick test, but it might not come out clean because of the chocolate chips that have melted inside.
Allow bars to cool for at least 1 hour before slicing and serving.
