We’re all busy people nowadays. We have hectic schedules and we’ve always got something to do and unfortunately, we cut down from the time we spare for some very important things in our lives.
One of them is eating. We forget about our three meals a day and sometimes we even cut meals out completely. And that’s probably against everyone’s advice (your doc’s, your trainer’s, even your mother’s). What we should do, is look for ways to make the best meals as fast as possible.
Well, this BLT Sandwich doesn’t take long to make. And just look at it. It’s exactly as the name suggests BIG (to keep you fueled through the day), LOADED (with protein and fibers) and soo TASTY (to keep you coming back for more 🙂 ). It’s one of my favorite breakfasts.
And you can really make it in 15 minutes tops, assuming you have a ready-made pesto. For this sandwich, I made my own pesto sauce with kale, fresh basil, and almonds. If you want to see the recipe, check out my post Homemade pesto sauce with basil, kale and almonds.
A small tip: To enhance the chicken’s flavor and tenderness, it’s best to macerate it the day before, in a blend of olive oil and seasonings (Himalayan salt, pepper, chili flakes, garlic flakes, dried herbs) and keep it in the fridge for when you need to cook it.

How to make the perfect BLT Sandwich
A Perfect Big Loaded Tasty Sandwich
- 150 g chicken breast
- 4 tbs olive oil
- 1 tbs seasoning mix salt, pepper, chilli flakes, garlic powder
- 2 slices of bread
- 2 slices ripened tomato
- 60 g mozzarella sliced
- 6 tbs home-made pesto sauce
Slice thinly the chicken breast and keep it for 2 min to 2 hours(I usually make it the night before, the longer the better) in a mix of 4 tbs olive oil, salt, pepper, chilli flakes and dried garlic powder. This will give it moisture and tenderness.
Cook the chicken slices in a hot pan, for 3 min each side, until golden. After the first side is ready, flip it over, give it one minute, then add the mozzarella slices and leave it for about 2 min, until it melts.
Toast the bread slices.
Spread one full tbs of pesto on each slice of the toasted bread.
Add 2 tomato slices.
Arrange the chicken and melted mozzarella on top of the tomato.
Put the remaining slice of pesto - spreaded toast on top to finish the sandwiches.
Tips: If you’d like a huge BLT make double or even triple the recipe and place them all on top of each other (just like the one in the photo above). Triple BLT, Triple Delish!
