Teriyaki chicken with broccoli and rice. An easy and healthy recipe.
This is a delicious Japanese recipe that you can make in about 30 minutes. It’s healthy and most importantly it’s delish. Now let’s start cooking, shall we?
Teriyaki Chicken Recipe
- 1 chicken breast fillet with skin
- 200 g broccoli
- 150 g cooked rice
- 1 Tbs sesame seeds
- 2 Tbs light soy sauce
- 1/3 cup Japanese Mirin sweet rice wine
- 1 Tbs brown sugar
Wash the rice and cook it according to the package instructions. When is ready, drain the water and season it with salt, 1 tbs Mirin and mix well. This will add a nice flavour to the rice.
Break the broccoli into florets, then blanch it in boiling water for about 2 minutes.
Preheat the oven to 180C.
In a sauce pan, add soy sauce, Mirin and brown sugar. Bring it to the boil, then let it reduce for 10 minutes until the sauce gets thick.
Heat up a small cast iron skillet, over medium heat, drizzle a bit of olive oil, and add the chicken breast with the skin side down. Sear it for 2 minutes on each side.
Put the teriyaki sauce on top of the chicken, and place the skillet in the oven. Let it roast for 20 minutes.
Slice the chicken breast and sprinkle with sesame seeds. In a bowl, add some rice, broccoli the top it with sliced teriyaki chicken.
Add extra teriyaki sauce and Enjoy!
