The Lazy Brunch. That’s what I call this Smoked Salmon Omelette Recipe
Today was my lazy day. I woke up, looked at the clock and I was like Wow, I haven’t woken up this late in ages, it feels great. Oh yea, today is my day off. I’ve got no plans so I can just relax in my warm, cozy bed, with my favourite tea mug and my laptop, just facebooking, checking out some new recipes or trying to keep up with the Kardashians :)) .
All good until my tummy started rumbling. I went to the kitchen, and tried to make something quick with whatever I could find. A few slices of bresaola and salmon, some cherry tomatoes, a bit of greek yogurt and butter.
And this is how I came up with the Lazy Brunch (cool name right 🙂 )

How to make the Smoked Salmon Omelette with Bresaola, a.k.a The Lazy Brunch
Check out the recipe below:
9 slices of bread a few slices of smoked salmon 3 eggs A few cherry tomatoes Some chives 100g greek yogurt A few slices of bresaola 1 tbs chillies 2 tbs butter
And here is how to do it:
Grease the pan with a bit of butter, add the cherry tomatoes and sauté them for about 2-3 min to enhance their flavour.
Then take the tomatoes out, toss 3 eggs in the pan and stir them well for about 5 minutes until your omelette is ready.
Take a few slices of bread, add 2 full spoons of omelette on each, then add a slice of bresaola and a cherry tomato on top.
Take the other slices, add the smoked salmon, 1 spoon of yogurt and garnish them with chopped chives and chilies.
And there you go. Brunch is served.
